I made this the other night and thought it was really good. It's a recipe from Whole Foods Market. I served onion roasted red potatoes and broccoli with it. I used the frozen tilapia fillets from Costco and just thawed them. I've never had tilapia before, but took a risk and bought it from Costco and it's yummy fish.
Baked Southwestern Tilapia
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
4 (6-ounce) tilapia fillets
2 tablespoons extra virgin olive oil, divided
1 lime, cut into wedges
Preheat oven to 375°F. In a small bowl, mix garlic powder, chili powder, salt, black pepper and cayenne. Sprinkle evenly over both sides of tilapia. Coat a baking sheet with 1 tablespoon of the oil. Arrange tilapia in a single layer on the baking sheet. Drizzle tilapia with the remaining tablespoon of oil and bake until golden brown and flesh begins to flake, 10-15 minutes. Serve with lime wedges on the side.
